Shimono Farm Co., Ltd. has specialized in growing komatsuna mustard spinach since
1980. The techniques cultivated over the 40 years since the previous generation first
cultivated komatsuna in Osaka. The Shimono Farm’s komatsuna is soft and sweet with less
fiber. Its dark color and sweetness are also its characteristics. In addition to taking on the
challenge of reducing the use of pesticides since 1989, the farm continues to produce safe
vegetables through "environmentally friendly agriculture," paying extra attention to seeds,
water, fertilizers, and soil.
