One notable variety, mizunasu thrives in the rich Senshu soil, evolving distinct features such as a thin peel and high moisture content. It is particularly recommended when pickled and for raw consumption. When eating it raw, we suggest adding it to a salad or wrapping it with uncured ham drizzled with olive oil.However, there are still many more ways to enjoy mizunasu. It is called “multi-use eggplant” among local farmers, and it can be heated up like normal eggplants as a delicious way to prepare it.
